Combine all ingredients in a baking pan or a large oven safe glass pan.
Put the potatoes single layered on pan and start roasting, flipping potatoes twice during roasting helps them cook evenly.
Depending on your elevation and oven, it takes about 35 minutes for the potatoes to be done.
Before serving, sprinkle the flax oil over the potatoes! You can always use more than 2 tbsp!
