Soak cashews in very hot water for 15-20 minutes, then drain.
Add all ingredients to a blender and blend on high until smooth and creamy.
Taste and adjust flavor as needed (more salt, lemon juice or herbs)
Consistency is important!
Too thick? Add more water or oil.
Too thin? Just add more cashews.

Our most desired dishes are usually made by mom. Partly because that's what we were served growing up but most importantly because mom's put in the love that make the most simple dishes taste awesome enough for us kids to eat! Nowadays you would say, mom's just know how to add the ZING to the most simple dishes.
This green goddess dressing recipe is a great example of that. My mom always made it with funky oils to switch it up and we never got tired of it! Some of my friends kept calling it green ranch dressing, which doesn't do it any justice.

Add all the ingredients to a blender. Add a little bit of water and pumpkin seed oil for more creaminess. You'll have a thick, pour able and ZING'ING dressing!
