Vegan Blueberry Muffin

Ingredients

  • 2 cups Organic Flour
  • 1 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 2 Lemons For Lemon Zest
  • 1 cup Organic Cane Sugar
  • 1 cup Almond Milk (Joanne uses water when we run out of almonds)
  • 1/3 cup Ostro Organics Sunflower Oil
  • 1 tsp Lemon Juice
  • 1 tbsp Apple Cider Vinegar
  • 1 1/2 cups Organic Blueberries

Instructions

  1. Preheat the oven to 375F  for 15 minutes. Lightly grease the muffin tin with cold-pressed coconut oil.
  2. In a bowl combine flour, baking soda, salt and lemon zest.
  3. In a bigger bowl combine sugar, milk, sunflower oil, lemon juice, and vinegar. Mix well.
  4. Add the dry ingredients to the wet ingredients, stir until well combined. Don’t over stir.
  5. Gently fold in the berries using a rubber spatula. Use organic, washed blueberries.
  6. Fill the muffin tins up to 2/3rds with the mixture.
  7. Bake until a wooden skewer inserted into the center comes out clean. About 20 minutes.
  8. Take out of the oven and let cool for 5 minutes. Then remove the muffins from the tins and cool on a wire rack, cloth, kitchen board.
  9. Indulge with friends and family!

While I don’t follow a specific diet, I am drawn toward plant-based options. Furthermore I follow a balanced diet and eat a wholesome diet focused on real food. When Joanne suggested if I wanted to have some blueberry muffins baked, I promptly replies YESSSSS and was already a huge fan. Truth be told, I had no idea the muffins were vegan or plant based, I am particularly fuzzy about organic and wholesome ingredients, and when she used my fresh, cold-pressed sunflower seed oil, I was SUPER STOCKED!  It’s exciting to share this recipe with like-minded folks that choose to source fresh and wholesome ingredients to make their favorite dishes.

Variations That Are So Manfred

Yes, I like to add a raspberry or strawberry here and there. Specially when we have friends with kids coming over – Always fun when they discover the “surprise-muffin” which contains some extra fruit and sometimes chocolate chips. (If I get them passed Joanne’s back and manage to throw them into the muffin-tin before she notices;-)

  • Add different fruit or fruit pieces
  • Chocolate chips
  • Tangerine or other Citrus Fruit (also works well with candied ginger)
  • Indulge with coconut whipping cream
