Refreshing Veggie Dip with Poppy Seed Oil

Ingredients

Veggie Dip

  • 1/4 tsp. fresh minced garlic
  • 1 tbsp. fresh sliced chives
  • 1 tsp. sea salt
  • 1 tbsp. fresh or dried dill weed
  • 1 tbsp. fresh parsley
  • 1 c poppy seed oil mayonnaise

Poppy Seed Oil Mayonnaise

  • 1 c quark or sour cream
  • 3/4 c Ostro Organics Poppy Seed Oil
  • 1 tbsp. vinegar
  • pinch cayenne pepper
  • 1/2 tsp. salt
  • 1/2 tsp. mustard
  • one egg yolk
  • chopped fresh dill and fresh chives for garnish if on hand

Instructions

Poppy Seed Oil Mayonnaise

  1. For the Poppy Seed oil Mayonnaise whisk together egg yolk, mustard, salt, cayenne, and vinegar in a small mixing bowl. Whisk in Ostro Organics fresh Poppy Seed Oil a drop at a time. Slowly but surely the mixture will emulsify and get thinker.
  2. Tip: Make sure to have the egg yolk at room temperature and not too cold!

For the Veggie Dip

  1. Place the quark or sour cream, poppy seed oil mayonnaise and other ingredients in a bowl.
  2. Stir until ingredients are thoroughly combined.
  3. Cover and chill until ready to use, up 5 days.
  4. Top with fresh chives and dill if desired. Serve with fresh veggie sticks!

Why We Think This is The Best

This is a very basis veggie dip that we like to make when we go to work or when we go for a hike. Classic garlic and herb flavours enhanced by the fresh taste of poppy seed oil!

 

My Favorite Variations of This

There are numerous variations that come to my mind, here are my top five!

  • My Italian Variation: Chop and add 1/3 cup of sun dried tomatoes
  • Summer Mood: Add 1/2 cup of blanched baby spinach, drain well before adding!
  • Spicy Mood: Add 1/3 cup chopped red bell peppers and 1 teaspoon of  Ostro Organics Habanero Chili Oil
  • Garlic-moi: Sometime I have the urge for some extra garlic – saute an extra two teaspoons of freshly minced garlic in some poppy oil and add to the mixture
  • If you happen to have some extra guacamole or half an avocado, add and indulge right away!

I don’t recommend freezing this dip as it tends to congeal. However it keeps well in the fridge for up to five days. That is if you can resist it for that long!
