Joanne’s Baked Zucchini Flowers Frittata

Ingredients

 

  • 12 zucchini flowers, washed and roughly cut into 1 inch pieces, plus a few more for decorating the top
  • 6 cloves garlic, minced
  • 1/4 cup fresh mint, minced
  • 1 cup gluten free bread crumbs
  • 8 large organic eggs
  • 1/2 cup Ostro Organics Coconut Oil
  • Optional: 1 1/2 cups grated vegan cheese or pecorino romano cheese

Instructions

 

  • Preheat the oven to 400 Degrees.
  • Oil an 11 inch loose bottomed tart pan with Ostro Organics Coconut Oil.
  • In a large mixing bowl combine the cut Zucchini flowers, garlic, mint, breadcrumbs, eggs and warmed up coconut oil. Mix well until you have a liquid batter. If the mixture seems a little dense add 2-3 tablespoons of almond milk. Spread the batter into the prepared pan.
  • If you have any zucchini flowers left for decorating, cut them in half lengthwise and arrange them on top of the batter.
  • Bake for 25 minutes or until the edges begin to brown and the center of the frittata is golden in color.
  • Indulge!!

Frittata is a humble Italian egg based dish similar to an omelette but enriched with seasonal vegetables.  This zucchini blossom frittata is the perfect dish to serve as a main course or side dish. And it showcases summer’s freshest ingredients combined with the finesse of fresh Ostro Organics Coconut Oil.

 

Joanne’s Tip:

  • Add summer corn, fresh off the cob and mushrooms to make it a full meal.
  • Red Peppers and various seasonal herbs usually find their way into my second Fritatta of the season 😉
  • You can also add some garden tomatoes and sweet peas
  • I love to sprinkle some Jalapeno Pepper Oil on my portion – Manfred prefers the Scorpion Chili Oil to add a bit of heat
  • Have a garden salad on the side to make the perfect lunch
  • I also serve it alongside fresh spring salmon or BBQ vegetable
